I found this Arugula mayonnaise recipe on the “chef-menus.com” website when creating a menu for my daughter’s baby shower. I served it on smoked turkey tea sandwiches and it transformed the sandwich into something spectacular! The combination of spicy arugula, sweet shallots, parsley, and zing of lemon zest elevated this simple turkey finger sandwich to the next level. My version uses Vegenaise which tastes like regular mayonnaise and is egg free so it doesn’t upset my tummy.

Tip: Regular mayo can be substituted for the Vegenaise.

Ingredients:
1. | 1 Tbsp minced shallot |
2. | 1 tbsp chopped fresh parsley |
3. | 1/3 cup (packed) coarsely chopped arugula |
4. | 1/2 tsp grated lemon zest |
5. | 1/2 cup of Vegenaise (mayonnaise) |
Directions:
Prep Veggies.
Mince shallots.
Chop parsley.
Coarsely chop arugula.
Place it all in a small bowl.
Add the Mayo.
Fold mayonnaise into a bowl with prepared veggies.
Add Lemon Zest.
Add grated lemon peel/zest to the bowl and mix well.
Add salt and pepper to taste.
Notes:
Serve on sandwiches, burgers, or spread on sliced cucumbers.
