Feta-Stuffed Chicken

This is a light version of fried chicken that even the kids will enjoy. It comes together  quickly too, making for a quick, delicious weeknight dinner. The skinless, boneless chicken breast baked in panko breadcrumbs keeps the chicken lighter and  crispier creating a distinct texture that resists the absorption of oil. The chicken can be served over salad for lunch or with your favorite side vegetable for dinner.

Tip: Panko is a Japanese breadcrumb that results in a flake that is lighter, crispier, and airier than regular breacrumbs.

Ingredients:

1.4 (4oz) skinless, boneless organic chicken breast halves
2.¼ cup dry bread crumbs or panko (gluten free opt)
3.¼ cup (1oz) crumbled feta cheese
4.1 ½ teaspoons grass-fed butter or ghee, melted

Salad

1.3 cups spinach, washed and torn
2.1/2 cup fresh basil, chopped
3.1 tablespoon balsamic vinegar
4.1 teaspoon olive oil
5.1/8 teaspoon black pepper, or more to taste
6.Sea salt to taste

Directions:

Pre-Heat Oven and Prep Pan.

Pre-heat oven to 400 degrees.

Lightly coat an 8-inch baking dish with olive oil spray.

Prep  Chicken.

Place each chicken breast half between two sheets of heavy-duty plastic wrap & flatten to ¼-inch thickness, using a meat mallet or rolling pin.

Dredge Chicken and Add Cheese.

In a oblong dish add breadcrumbs. Dredge chicken breast in the breadcrumbs.  Spoon up to 1 tablespoon of cheese in the middle of the breast, then fold chicken in half securing with a toothpick. Add folded chicken breast to prepared pan.

Repeat process to remaining chicken breasts.

Drizzle with Melted Ghee/Butter.

After all feta-stuffed chicken is in prepared pan, drizzle about one teaspoon of melted butter/ghee over each breast.

Place uncovered, in oven and cook for 25 minutes or until golden brown.

Prepare the Salad.

If you are serving chicken over salad follow next steps.

While chicken is cooking, combine torn spinach and chopped basil in a bowl and drizzle with vinegar and oil. Sprinkle with salt & pepper. Put aside until chicken is ready.

Serving Suggestion.

Once chicken is cooked, place greens on 4 plates and serve feta-stuffed  chicken breast on top.
