

Lentils are a great addition to a nutrient-dense diet. One cup has 18 grams of protein making it a great plant-based protein source, and with 14 grams of fiber this salad will fill you up. Diced cucumbers, tomatoes, and a little red onion give this refreshing salad a Persian twist and makes for a perfect side dish or stand alone lunch. To add more freshness, add chopped mint to the salad.
Tip:Prep time is 15 minutes. Chill in fridge for 20 minutes.

Ingredients:
1. | 1 (15 ounce) can organic lentils, drained and rinsed |
2. | ¼ cup red onion, diced |
3. | 2 tomatoes, diced (optional) |
4. | 2 small cucumbers, diced |
Dressing
1. | ¼ cup olive oil |
2. | 2 tablespoons apple cider vinegar |
3. | 2 tablespoons fresh lime juice |
4. | Salt and ground black pepper, to taste |
Directions:
Prep Veggies.
Dice red onion, tomatoes and cucumbers and place in a bowl.
Add Lentils.
Add 1-15oz can of organic lentils, drained and rinsed to bowl of diced veggies. Set aside.
Prepare Dressing.
Whisk olive oil, apple cider vinegar, lime juice, salt & pepper together in a separate bowl.
Combine All Ingredients.
Pour dressing over lentil mixture; stir to coat. Chill in refrigerator for 15-20 minutes.
