No Bake Almond Apricot Squares

Craving something yummy? Try these delicious No Bake Almond Apricot Squares. These grab-and-go bites are naturally sweetened with apricots and raisins, are low in calories, and packed with protein, fiber, and good fats making them a great pre-gym snack or a healthier dessert option.

Ingredients:

1.1 cup raw almonds
2.1 cup raisins
3.1/2 teaspoon cinnamon
4.10 dried apricots, chopped
5.1/2 cup unsweetened shredded coconut

Directions:

Combine First 3 Ingredients In Food Processor .

Place the almonds, raisins and cinnamon in a food processor. Turn on until mixed thoroughly into a smooth, thick almond butter paste, about 3 minutes or so. Turn off food processor.

Add Remaining Ingredients In Order.

Add the chopped apricots and pulse for 30 seconds, then add the coconut and pulse for another 10 seconds.

Removing the Dough.

Cover a cutting board or counter top with a large piece of plastic wrap. Remove the dough from the food processor and place in the center of the plastic wrap. Pull up the plastic on either side, and while keeping the layer of plastic between your hands and the dough, gently press and spread the dough out to form one large square.

Chill the Dough.

Wrap up the square and place in the freezer for 20-30 minutes. This will make it easier to cut.

Final Step.

After the dough sets in the freezer, using a sharp knife cut the square into 25 smaller squares.
